This is probably the best Paleo coconut flour pancake recipe I have tried. It’s very easy and fast to prep the ingredients. If you cook even semi-Paleo, you will have everything in the house already. If not- go get them because all of the ingredients are worth keeping in your baking cabinet if you plan on making more Paleo recipes.
It’s about 5 minutes worth of prep and less than 10 minutes of cooking.

Paleo Coconut Flour Pancake Recipe
Ingredients
- 2 egg whites
- 1/4 cup coconut flour
- 1/2 cup almond milk Unsweetened almond milk (the vanilla flavor adds a bit of good sweetness to the recipe)
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/8 teaspoon cinnamon (or more if you want)
Combine everything in a bowl. Whisk together real good to get all of the lumps out. At first it may seem like the batter is too thick and dry- but they cook up real moist and delicious!
Make sure your skillet is hot and coated with a FF spray or coconut oil. I used an ice cream scooper to measure the batter and pour it in the skillet.
Cook about 4-6 mins each side- depending on how hot your skillet is. You want them to be golden brown on each side.
I poured real Maple Syrup over mine. They were good!
